The soups also serve as a soft transition from the meatless 40-days lent to prepare the stomach for the excessive meat consuming feast of Easter Sunday.

As dusk settles on Holy Saturday, a warm glow illuminates the night sky.  Communities gather around bonfires, a tradition known as “Lambratzia”, before heading to the Churches for the Easter service. At exactly midnight, the church goes completely dark and the priest lights a candle. This candle represents the eternal flame of Jesus. The priest then shares the flame and people begin to light up each other’s candles.
